Gluten-free tortilla chips with seasoned meat, cheese and toppings.
Kitchen-testing note: A documented cooking test is pending. Timings in the method are estimates; finished yield and results have not been confirmed in our current testing log. Nutrition figures and unsupported historical rating totals have been removed.
Before you cook
Cook ground beef to 160°F, or ground turkey to 165°F, before assembling. Check the chips and seasonings. A dairy-free cheese substitution alone does not address sour cream or other dairy toppings.
Choosing gluten-free ingredients
Check the exact products you buy, especially flour, oats, bread, pasta, sauces and broth. Gluten-free labeling and third-party certification are different. A recipe page or scanner cannot guarantee a dish’s preparation. Use clean equipment and protect ingredients from contact with gluten-containing foods. Gluten-free does not mean free of dairy, eggs, nuts or other allergens. See the FDA guide to gluten-free labels.
2x and 3x show total ingredients for two or three separate batches. Cook each batch using the original method: amounts written in the steps, pan sizes and cooking times apply to one batch.
-
1Preheat and Prep Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper for easy cleanup and to prevent sticking.
-
2Cook the Meat In a skillet over medium heat, warm the olive oil and sauté the minced garlic for 30 seconds until fragrant. Add the ground beef or turkey and cook until browned and cooked through, about 7-8 minutes. Drain excess fat if needed. Before assembling, check ground beef reaches 160°F or ground turkey 165°F with a food thermometer.
-
3Season the Meat Sprinkle the gluten-free taco seasoning over the meat, stirring well to coat evenly. Add a splash of water if the mixture seems dry, then simmer for 2-3 minutes until flavors meld.
-
4Arrange the Chips Spread the gluten-free tortilla chips evenly across the prepared baking sheet in a single layer to ensure even melting and heat distribution.
-
5Add Toppings Scatter the seasoned meat evenly over the chips. Sprinkle shredded cheddar cheese generously on top, followed by diced tomatoes, red onion, jalapeños, and black olives.
-
6Bake to Melt Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is fully melted and bubbly. Keep an eye so chips don’t burn.
-
7Garnish and Serve Remove from oven and dollop sour cream or its dairy-free substitute over the nachos. Sprinkle chopped cilantro on top before serving warm.
Food handling and leftovers
Use a food thermometer and the safe cooking temperature chart. Refrigerate perishable food within two hours, or one hour above 90°F, in shallow containers as appropriate. Keep the refrigerator at 40°F or below. Use refrigerated cooked leftovers within 3–4 days; reheat cooked leftovers to 165°F. These are general handling limits, not a tested texture or shelf-life claim for this recipe. See USDA leftover guidance.
